Recipe Ingredients for Green Chile, Chicken and Bean Chili

1 tbsp Olive Oil
1 cup, chopped Onions
2 tsp Garlic
3 tsp Cumin
1 tsp Salt, Table
1/4 tsp Cayenne
32 oz Boneless Skinless Chicken Tenderloins
32 oz Great Northern Beans
9 oz Fiesta, Green Chilies, diced
16 oz Light and Fat Free Chicken Broth

Recipe Directions for Green Chile, Chicken and Bean Chili

  1. In 4 1/2 to 5 quart Dutch oven, heat oil over medium-high heat. Add onions and garlic; cook 4 to 5 minutes, stirring fequently, until onions are softened.

  2. Stir in cumin, salt, red pepper and chicken. Cook 6 to 7 minutes, stirring occasionally, until chicken is lightly browned.

  3. Stir in beans (drained and rinsed), broth and chiles (do not drain). Heat to boiling. Reduce heat to medium-low. Cover and cook for 20-25 minutes, stirring occassionally, until chicken is no longer pink in center. Sprinkle with cilantro.
