Recipe Ingredients for Green Chile Casserole/Beef

1 lb extra lean ground beef
6 peppers, anaheim
1/2 cup white onion
1 cup shredded monterey jack cheese

Recipe Directions for Green Chile Casserole/Beef

  1. Brown ground beef with chopped onion. While ground beef is browning, wash, seed and slice poblano chiles, place in covered container with 1/4 inch of water in microwave to steam - approx. 6 minutes on high

  2. Layer in casserole dish - chiles, beef, cheese, repeat, ending with chilies, sprinkled with a little cheese

  3. Bake at 350 for 30 minutes - until cheese is brown - you can pour off any excess liquid and grease before serving.
