Recipe Ingredients for Green Cauliflower Enchiladas

1 head cauliflower
1 onion
1 c ripe olives, sliced
2 tomatoes
15 oz. black beans, rinsed
9 corn tortillas
3/4 lb ricotta cheese
15 oz green enchilada sauce

Recipe Directions for Green Cauliflower Enchiladas

  1. roughly chop vegetables

  2. combine with olives and beans

  3. layer tortillas

  4. layer 1/2 the vegetables

  5. sprinkle cheese

  6. pour 1/2 Cup of enchilada sauce; repeat steps above

  7. top with 3 tortillas

  8. add rest of enchilada sauce and 1.5 cups water

  9. cook on low for 5.5 hours
