Recipe Ingredients for Green Beans w/ Walnut Viniagrette

16 oz Beans, Snap, Green
1/4 cup Chopped Walnuts
1/4 cup Parsley or Cilanto
4 tbsp chopped Shallots
1 tbsp Walnut Oil
2 tsp Vinegar red wine
2 tsp Classic Dijon Mustard
1 Salt
1 Pepper

Recipe Directions for Green Beans w/ Walnut Viniagrette

  1. Toast Walnuts over medium heat, in a dry pan, for about 2 minutes or until they are smelling very toasty. Move to a bowl and toss with parsley and shallots.

  2. Steam the green beans about 4 minutes, and transfer to serving bowl.

  3. Combine the oil, vinegar, and dijon, and toss with the green beans. Sprinkle on the Walnut/Shallot mix and then the crumbled feta over the top. Serve hot or chill.
