Green Beans with Tomato and Olive Oil

Recipe Ingredients for Green Beans with Tomato and Olive Oil

80 ml Olive Oil
1 large Onion, chopped
3 Garlic Cloves, Finely Chopped
400 g Tinned Chopped Tomato
1/2 tsp Sugar
750 g Green Beans, Trimmed
3 tbsp Parsley

Recipe Directions for Green Beans with Tomato and Olive Oil

  1. Heat the olive oil in a large frying pan, add the onion and cook over medium heat for 4-5 minutes, until softened. Add the garlic and cook for another 30 seconds.

  2. Add the tomatoes, sugar and 125mL water, then season with salt and pepper. Bring to the boil, then reduce heat and simmer for 10 minutes, or until reduced slightly.

  3. Add the beans and simmer for an other 10 minutes, or until the beans are tender and the tomato mixture is pulpy. Stir in the parsley. Check the seasoning, and adjust according to taste.

  4. Serve immediately as a side dish.
