Green beans are one of the few vegetables almost everyone will eat, and we are always on the lookout for more recipes in which they star. Green beans Parmesan is a classic side dish in which the beans are topped with a quick tomato sauce, crunchy breadcrumbs, and nutty Parmesan cheese. While it sounds complicated, we found that it can be prepared pretty quickly and effortlessly in just one pan. Here?s what we discovered: Discoveries * Cook the recipes in steps. Toast the breadcrumbs (remove from the pan), cook the tomato topping (remove from the pan), and then sauté the green beans. Braising the beans in broth flavored with the tomato mixture--after they are sautéed--softens them and deepens their flavor. * Use good-quality, imported Parmesan cheese for the best flavor. Buy a reasonably sized chunk, keep it tightly sealed in an airtight zipper-lock bag, and grate it fresh. * Add fresh basil to keep the flavor bright. Dried basil won?t taste nearly as good.

Recipe Ingredients for Green Beans Parmesan

2 teaspoons unsalted butter
1/3 cup fresh bread crumbs
1/4 cup grated Parmesan cheese
1 teaspoon chopped fresh basil
2 teaspoons olive oil
1/2 small onion , chopped fine (about 3 tablespoons)
1 Table salt
1 garlic clove
1/3 cup canned diced tomatoes
1/3 pound green beans , ends trimmed
2 tablespoons canned low-sodium chicken broth
1 Ground black pepper

Recipe Directions for Green Beans Parmesan

  1. Melt butter in medium skillet over medium heat. Stir in bread crumbs and cook, tossing often, until golden brown, 2 to 3 minutes. Transfer to medium bowl and toss with tablespoon Parmesan and basil.

  2. Wipe out skillet, add 1 teaspoon oil, and heat over medium heat until shimmering. Add onion and 1/8 teaspoon salt and cook until soft and golden, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and cook until liquid evaporates, about 2 minutes. Transfer to small bowl.

  3. Wipe out skillet again and heat remaining tablespoon oil over medium-high heat until just smoking. Add green beans and 1/4 teaspoon salt and cook, turning beans several times, until browned in spots, about 6 - 8 minutes. Reduce heat to low and stir in tomato mixture and broth. Cover and cook until beans are just tender, about 5 minutes. Remove lid and cook until liquid evaporates, 1 to 2 minutes.

  4. Off heat, toss in remaining Parmesan and adjust seasonings with salt and pepper. Transfer to serving dish and top with bread crumbs. Serve.
