Green Beans, Leeks and Mushrooms in a creamy Cider sauce

Recipe Ingredients for Green Beans, Leeks and Mushrooms in Cider

1 tbsp oil
450 grams green beans
2 leeks
200 grams mushrooms
450 grams cider
300 grams cream
15 grams sugar
95 grams tofu

Recipe Directions for Green Beans, Leeks and Mushrooms in Cider

  1. Wash, trim and slice Beans and Leeks. Slice Mushrooms

  2. Stir-fry the beans in the oil for a couple of minutes

  3. Add a good splash of the Cider and throw in the Leeks. Add some more Cider and stir and fry, adding cider as it evaporates (the goal is to steam cook the veg in the Cider)

  4. After a couple of minutes, add the Mushrooms and a little more Cider. Reduce the heat slightly.

  5. When the veg are cooked (the Beans should still have a little bite) add the Cream and some Salt and Pepper to taste. Add the rest of the Cider, if there's any left. Bring to boil and serve.
