2 big serves of light fresh string bean salad

Recipe Ingredients for Green Beans and Cherry Tomatoes Salad

300 g green beans, chopped
100 g cherry tomatoes, chopped
2 tbsp fresh basil, chopped
1/2 small red onion
1 tbsp mustard
2 tbsp olive oil
1 pinch salt
1 tbsp black pepper
2 tbsp red wine vinegar

Recipe Directions for Green Beans and Cherry Tomatoes Salad

  1. Cook the green beans into boiling water 7-10 minutes. They need to be cooked but still crisp. Rince over cold water, repeat, until cold.

  2. In a salad bowl, cut the cherry tomatoes in two and add the minced onion, the basil and the beans.

  3. In a vinaigrette bowl, mix the vinegar and the mustard. Gradually add the oil. Season with salt and pepper. Shake well and pour over the salad.

  4. Serve!
