A delicious way to eat green beans

Recipe Ingredients for Green Beans Almondine

1/2 lb. fresh green beans
1/2 medium onion
1 tbsp olive oil
1 oz. sliced almonds
1/4 cup chicken broth
1 salt and pepper

Recipe Directions for Green Beans Almondine

  1. Thinly slice the onion, then saute in the oil in a medium frying pan

  2. Toast the almonds to a light olden brown in the oven (I use the toaster oven).

  3. Clean and trim the green beans,, then steam in the microwave for 4-5 minutes, until tender-crisp.

  4. Once the onions have browned nicely, drain the green beans and add them to the pan

  5. Pour in the chicken broth, and let the mixture simmer for about 3 minutes

  6. Season with salt and pepper to taste

  7. Just before serving, add the almonds and toss to coat.

  8. Note: you can easily make this vegan by substituting vegetable stock for the broth.
