Modified version of Karen's green bean salad recipe. Use marinated artichoke hearts ~ save the marinade to use as a dressing for the salad.

Recipe Ingredients for Green Bean Salad

2 lbs green beans
15 oz artichoke hearts, chopped
1 1/2 cups walnuts, chopped

Recipe Directions for Green Bean Salad

  1. Blanch 2 lbs of trimmed green beans.

  2. Toast walnuts.

  3. Toss artichokes, walnuts, and add salt to taste.

  4. Refrigerate.
