THIS IS A BEAN SALAD WHICH IS LACKING 4 THINGS USUALLY FOUND IN SALADS---VINEGAR, ONIONS, SALT, AND CALORIES. THE TRUE FLAVOR OF THE BEANS COMES THROUGH

Recipe Ingredients for GREEN BEAN SALAD WITH FRESH TOMATO CHUTNEY

3 cups OF GREEN BEANS,TRIMMED--WHOLE OR CUT
2 cups OF TOMATOES, CHOPPED
1 tablespoon GARLIC, CHOPPED
1 tablespoon GINGER, CHOPPED
1 teaspoon CUMIN,GROUND
1/2 teaspoon HOT PEPPER, CHOPPED,OPTIONAL
1 tablespoon SPLENDA, BROWN SUGAR
1/2 cup CHERRY TOMATOES, HALVED

Recipe Directions for GREEN BEAN SALAD WITH FRESH TOMATO CHUTNEY

  1. PREPARE FRESH GREEN BEANS BY TRIMMING, CUTTING AND BLANCHING, PUT INTO ICED WATER TO COOL

  2. AFTER COOLED, DRAIN AND SHAKE OFF EXCESS WATER--CAN BE REFRIGERATED OVERNIGHT IN A PLASTIC BAG(WRAP BEANS IN A PAPER TOWEL)

  3. CHOP TOMATOES IN A BLENDER

  4. ADD BROWN SUGAR SPENDA, SPICES, GARLIC, GINGER AND PEPPER AND CONTINUE TO BLEND UNTIL ALMOST SMOOTH. ADD SUBSTITUTE SALT AND PEPPER TO TASTE

  5. COMBINE BEANS AND TOMATO MIXTURE IN A COVERED CONTAINER OR A LARGE PLASTIC BAG

  6. REFRIGERATE UNTIL COLD OR OVERNIGHT

  7. STRAIN BEANS OUT OF LIQUID AND ADD CHERRY TOMATOES.

  8. LIQUID CAN BE USED AGAIN WITHIN A DAY OR TWO

  9. PLACE SALAD ON A BED OF LETTUCE ON A PLATTER.

  10. SPRINKLE WITH FRESHLY GROUND BLACK PEPPER AND GARNISH WITH A FEW THIN LEMON SLICES
