Recipe Ingredients for Green Bean Rye Strata

10 oz frozen cut green beans
1/2 cup thinly sliced onion (about 1 medium, 4 oz.)
1/2 cup sliced fresh mushrooms (about 2 oz.)
1/4 cup water
2 cups bread
1/2 cup skim milk
4 eggs
1 cup milk
2 teaspoons lemon juice
1/2 teaspoon salt
2 tablespoons grated Parmesan cheese

Recipe Directions for Green Bean Rye Strata

  1. Evenly coat 11 x 7 x 1 1/2-inch baking dish with spray. Set aside. In large saucepan, stir together beans, onion, mushrooms and water. Cook, covered, over medium heat, until beans are tender, about 15 minutes. Drain. Return to pan. Stir in bread cubes and cottage cheese. Spoon into prepared dish.

  2. In medium bowl, beat together eggs, milk, lemon juice and salt, if desired, until well blended. Pour evenly over bread mixture. Cover. Refrigerate several hours or overnight. Uncover.

  3. Bake in preheated 350 F oven until knife inserted near center comes out clean, about 45 to 55 minutes. Sprinkle with Parmesan cheese, if desired.
