Green bean salad with red wine vinaigrette

Recipe Ingredients for Green Bean and Red Onion Salad

2 pounds green beans
1 English Cucumber
2 red onions
3 cloves garlic
3 tablespoons olive oil
1/4 cup red wine vinegar
2 tablespoons water
1 teaspoon Splenda

Recipe Directions for Green Bean and Red Onion Salad

  1. steam and chill beans

  2. Seed and Julienne cucumber

  3. Combine beans and cucumber

  4. In a small skillet, saute the onion and garlic in 2 tablespoons of the oil until tender but not browned.

  5. Stire in the vinegar, water, and Splenda, and simmer for two minutes, stirring until the Splenda is dissolved.

  6. Stir in remaining oil.

  7. Spoon onion dressing over bean mixture.

  8. Serve immediately.
