A delicious greek stew that is great hot, or room temp. Top with a little sprinkle of feta cheese or pair with some crusty bread.

Recipe Ingredients for Green bean, potatoe and zucchini stew

1/4 cup olive oil
1 cup chopped onion
3 cloves garlic
1 pound fresh green beans, trimmed, halved crosswise
1/4 teaspoon cayenne pepper
8 ounces zucchini, cut into 1-inch-thick slices
8 ounces russet potatoes, peeled, cut into 1-inch cubes
3/4 cup chopped fresh Italian parsley
28 ounce Italian-style tomatoes, drained, juices reserved, tomatoes chopped

Recipe Directions for Green bean, potatoe and zucchini stew

  1. Add oil to a pan. brown onions and garlic. Add potato until slightly tender, toss in green beans and zucchini and cayenne. Dump in the tomatoes and simmer for about 45 min to an hour toss in parsley once the potatoes are soft.

  2. Eat right away or wait til later. Its great hot or cool.

  3. Top with feta for a flavor explosion.
