This salad is great if you're a vegetable gardener. Use up your garden sass. it's easy and ever so tasty.

Recipe Ingredients for Green bean and new potato salad

1 c red pepper
2 c green beans
1 c onion
1 c new potatoes
3 hard boiled eggs
2 tbsp dill weed
2 tbsp olive oil
1 tsp splenda
2 tbsp vinegar
1 tbsp dijon mustard

Recipe Directions for Green bean and new potato salad

  1. Boil new potatoes and trimmed green beans together until the potatoes are cooked.

  2. Dice onion and red pepper.

  3. Chop eggs.

  4. After potatoes and green beans have cooled to room temp, toss all ingredients together.

  5. Chill for 45 minutes or so, and serve with a pork chop or chicken paillard from the grill.
