This is a great casserole. I love to take it to potluck dinners. Everyone always wants the recipe. It is also good to take when there has been a death in the family, or someone is in the hospital and needs to feed a family. It can be frozen and defrosted when needed. It also doubles well. I also use the low-fat and low-calorie versions of the ingredients. Still tastes the same.

Recipe Ingredients for Green Bean and Corn Casserole

14 1/2 oz. green beans, French-style
11 oz. corn, shoepeg
1 can cream of celery soup
1/2 c cheddar cheese, grated
1/2 c sour cream
1/2 c onion, finely chopped
3 3/5 oz. Ritz crackers, 1 roll, crushed
1/2 c almonds, slivered
1 stick butter, melted

Recipe Directions for Green Bean and Corn Casserole

  1. Mix the green beans and corn in a casserole dish.

  2. In a bowl mix the soup, sour cream, cheese and onions.

  3. Spread over the vegetables.

  4. Mix the melted butter with the Ritz crackers and almonds. Spread these over the casserole.

  5. Bake at 350 degrees for 45 minutes.
