Recipe Ingredients for green bean casserole

12 oz frozen cut green beans (one bag)
4 oz mushrooms
3 onions
1 tsp olive oil
1 cups skim milk
1 tablespoon reduced-fat sour cream
2 teaspoons cornstarch
1 tablespoon flour

Recipe Directions for green bean casserole

  1. Thinly slice two large onions and spread them on a baking sheet. Sprinkle 1 tablespoon flour over them (to soak up their juices) and bake at 350F for 20 minutes. Then stir them up and turn them over and bake for another 20 minutes. Remove from oven when they look done and set aside.

  2. Chop one onion and quarter the mushrooms and put them into a large pan with a tsp of olive oil.

  3. Saute (gently fry) the onions and mushrooms until the onions are translucent and the mushrooms are soft.

  4. Add the frozen green beans and cook until they thaw and start to soften slightly.

  5. Turn the stove down to low and add the milk and stir in the sour cream. Heat gently until it warms up. Then add the cornstarch and stir continually until it thickens up.

  6. Pour the bean/sauce mixture into a baking dish and spread it out. Top with the onions and bake at 350F for thirty minutes.
