Middle Eastern salad: Green Beans, Aubergine, olive oil

Recipe Ingredients for green bean and aubergine salad

1/2 kg green beans
200 g aubergine
2 tomatoes, pealed and diced
4 cloves garlic, minced
3 g Pomegranate
1 pinch salt
1 pinch black pepper
1 tbs olive oil

Recipe Directions for green bean and aubergine salad

  1. brush sliced aubergine with olive oil and cook till tender and nicely toasted

  2. heat remaining olive oil in pan

  3. add garlic, onions, salt & pepper

  4. cut green beans to desired size

  5. add to pan and cook till willted

  6. add aubergine and pomegranate concentrate then toss gently for 2mins.

  7. then hey presto!
