** this recipe also calls for Fat Free Feta Cheese - but I could not find any in the database. I use President Fat Free Feta Cheese with Mediterranean Herbs. Be sure to add the Feta Cheese separately to your food log, if you add it to your zucchini packet ***

Recipe Ingredients for Greeked Zucchini

1 medium zucchini, halved and sliced
1/2 cup diced red onion
31 g (1/4 cup diced) sweet yellow bell pepper
1/2 cup shredded carrots
1/2 cup mushrooms, diced
4 ounce sliced black olives, drained
2 tablespoons Greek vinaigrette salad dressing
1/4 cup grape or cherry tomatoes
1/2 teaspoon rosemary
1/8 teaspoon ground black pepper

Recipe Directions for Greeked Zucchini

  1. Marinate Veggies: Place all items (except Feta Cheese if using) in a large plastic resealable (ziploc) bag. Toss around a few times so that everything gets coated with the dressing and seasonings. Place in refrigerate, allow to marinate for at least 20 minutes.

  2. Preheat oven to 350 degrees F (175 degrees C).

  3. Lightly spray a large piece of aluminum foil with nonstick olive oil cooking spray. Place 1/4 of the veggie mix onto the center. Sprinkle with 1 TBSP feta cheese (if using). Fold into a packet and seal the edges.

  4. Bake in preheated oven until vegetables are tender, about 30 minutes. Open the foil packet, turn the oven onto Broil, and broil until the feta lightly browns. Add the grape tomatoes and serve.
