Recipe Ingredients for Greek Wraps with White Bean Hummus

1/2 cup Cannellini Beans
1 tablespoon Rosemary
1 clove Garlic
0.529 oz Extra Virgin Olive Oil
16 oz Fresh Boneless Skinless Chicken Breasts
2 Medium Tomatoes
0.25 cup slices Cucumber
12 olives Napa Valley Bistro Olives
1 tbsp chopped Shallots
1 lemon yields Lemon Juice
0.529 oz Extra Virgin Olive Oil
0.5 cup Traditional Feta Crumbled
1 tablespoon Italian Parsley
4 cups Mixed Baby Greens

Recipe Directions for Greek Wraps with White Bean Hummus

  1. In a food processor, add beans, chopped rosemary, chopped garlic, salt and pepper, and EVOO. Pulse until smooth.

  2. Cut 2 chicken breasts length wise to create cutlets. Add salt and pepper and cook on medium-high heat until cooked through, about 3 minutes per side.

  3. Meanwhile, prep salad. Slice tomatoes thinly. Use just 1/4 of a seedless cucumber, slice thinly. Slice shallots (or red onion) thinly. Chop olives. Toss together with juice of one lemon and a touch of EVOO. Season with salt and pepper.

  4. Spread hummus in pita, add chicken, some salad and feta. Enjoy!
