A really fast, one dish light dinner.

Recipe Ingredients for Greek Turkey and Vegetables

1 lb smoked turkey breast
8 oz mushrooms
1 large red onion
1 large red pepper
185 grams feta cheese, light
1 lb butternut squash
1 lb red potatoes
3 tbs olive oil
3 tbs italian seasoning

Recipe Directions for Greek Turkey and Vegetables

  1. Peel and dice the vegetables into large pieces, aboout bite size.

  2. (note: if you are using new potatoes you don't have to peel them)

  3. Place the vegetables into a large bowl.

  4. Add in the olives.

  5. Cube the smoked turkey breast and add to the vegetables.

  6. Add the Italian (or Greek) seasoning and the olive oil.

  7. Stir to combine.

  8. Spray a large casserole with non-stick spray and add the turkey and vegetables.

  9. Crumble the feta cheese over the top.

  10. Bake in a 350 degree oven for 40 to 45 minutes, or until the vegetables are tender.
