Recipe Ingredients for Greek Turkey and Bean Burgers

20 ounces extra lean ground turkey
15 ounce cannelini beans
1/2 cup Couscous , uncooked
1 small red onion, diced
1 1/2 cups fresh spinach, chopped
1/4 cup chopped red or orange bell pepper
1/3 cup crumbled feta cheese
1/2 cup egg beaters
1/2 tsp dried oregano
1 pinch red pepper flakes or cayenne pepper to tatse
2 tbs olive oil
1 salt and pepper

Recipe Directions for Greek Turkey and Bean Burgers

  1. saute onion, garlic and bell pepper in 2 tsp of the olive oil until soft, stir in spinach and set aside to cool

  2. mash beans lightly, leaving about 1/3 cup whole

  3. crumble turkey over beans

  4. add spinach mixture and remaining ingredients except remaining olive oil and mix until well blended

  5. chill mixture at least 30 minutes

  6. measure 1/3 cup of mixture for each burger, form into patties

  7. cook in remaining oil at medium high heat or grill over medium coals for 5-6 minutes per side, or until temp reaches 165

  8. *to make ahead, place formed patties on wax paper lined cookie sheet, freeze until firm place in freezer bags and store in freezer until needed

  9. to cook from frozen lower heat to medium, increase cooking time by 3-5 minutes per side
