A nice greek take on a tuna casserole

Recipe Ingredients for Greek Tuna Bake

8 oz Whole Wheat Egg Noodles
2 tbsp olive oil
1/4 red onion, diced
1/2 red bell pepper, diced
1/8 cup flour
2 cups milk
15 oz tuna
1/4 cup black olives, diced
15 oz diced tomatoes
3 tbsp dried oregano
2 green onions
1 tsp salt
2/3 tsp pepper
1 1/2 tbsp capers
1/2 cup reduced fat feta cheese

Recipe Directions for Greek Tuna Bake

  1. preheat oven to 400.

  2. boil pasta, & drain.

  3. while noodles cook, prep other ingredients. Heat olive oil in a stockpot over med-high heat, add red onion and bell pepper, then saute until soft (3 to 4 min).

  4. Sprinkle flour and cook until flour begins to brown (apx 1 min). Lower heat to medium and gradually add milk, stirring until smooth

  5. add cooked noodles, tuna, olives, tomatoes, oregano, green onions, capers, salt, and pepper. Cook stirring occasionally until the mix is simmering and thick.

  6. Spoon mix into 8x8 baking dish and cover w/ feta cheese.

  7. bake until cheese begins to brown, about 20 min.
