Note: really use 1 lb LIGHT firm tofu; the analyser wouldn't let me put that in, so I adjusted quantities to get values close to 1 lb of the light tofu (93 cal, 2.1 g fat, 15.9 g protein).

Recipe Ingredients for Greek Tofu Bake

100 g tofu, firm
1/3 cup olive oil
1/3 cup balsamic vinegar (or wine)
1 tbs basil
1/2 tsp black pepper
1 tsp oregano
1 tsp salt

Recipe Directions for Greek Tofu Bake

Press tofu to drain, then cut in thin slabs and lay in a baking dish. Whisk rest of ingredients together and pour over tofu. Bake about 25 min. at 350, flipping once. Cut into strips and serve in while wheat tortillas with tomato, red onion, and black olives.
