Recipe Ingredients for Greek Style Zucchini Frittata

6 eggs
1/2 medium zucchini
1/2 medium onion
1/2 cup sundried tomatoes
2 tablespoons oil
1/2 cup feta cheese crumbles
1 tsp salt
1/2 tsp pepper
1 tablespoon oregano

Recipe Directions for Greek Style Zucchini Frittata

  1. Preheat oven to 400.

  2. Saute onions in oil until translucent.

  3. Add zucchini until soft.

  4. Add sundried tomatoes.

  5. Beat eggs, salt, pepper, and oregano and pour over vegetables.

  6. Cook on low until mostly set and then finish in the oven (5-10 minutes)
