Recipe Ingredients for Greek-style Cannellini Beans & Vegetables

2 cloves garlic
143 g onion, chopped (1 med to lg onion)
2 T olive oil
245 g carrots, chopped (2-3 carrots)
194 g red bell pepper, diced (1 lg)
324 g zucchini, chopped (2 med to lg)
2 T fresh mint, minced
2 T fresh dill, minced
1/4 t marjoram, dried
12 oz artichoke hearts, frozen or canned
2 cups (15 oz can) cannellini beans, drained
1 3/4 cups (14 1/2 oz can) stewed tomatoes, no salt added
1 salt
1 black pepper, ground

Recipe Directions for Greek-style Cannellini Beans & Vegetables

  1. Heat olive oil in a large pot over medium to medium high heat. Add the onions and garlic.

  2. While the onions and garlic saute, dice the carrots and bell pepper. Add them to the pot.

  3. Chop the zucchini and stir it into the pot of vegetables. Add the artichoke hearts. Add a pinch or two of salt to the vegetables. Let cook until the vegetables are beginning to soften, but aren't cooked through.

  4. Add the mint, dill and marjoram. Gently stir in the beans and the stewed tomatoes. Simmer for several minutes, stirring occasionally.

  5. Season with salt and pepper to taste.

  6. Serve with a splash of red wine vinegar and a sprinkling of parmesan cheese (if desired).
