Recipe Ingredients for Greek Stuffed Chicken Breasts

12 ounces (4) chicken breast halves, boneless, skinless
1/3 cup feta cheese, crumbled
1 1/2 tablespoons dried tomatoes, chopped
2 tablespoons cream cheese, softened
1 teaspoon dried basil
1/2 tablespoon olive oil

Recipe Directions for Greek Stuffed Chicken Breasts

  1. Place tomatoes in small bowl. Cover with boiling water. Let stand for 15 minutes. Remove from water and place between layers of paper towels to dry.

  2. Slice a pocket along the meatiest side of each chicken breast, taking care to not cut through the entire breast.

  3. Combine tomatoes, crumbled feta, cream cheese, and basil.

  4. Divide mixture into 4 portions. Place one portion of mixture into pocket of each chicken breast.

  5. In large skillet, heat olive oil over medium heat. Add chicken breasts and cook for 7-9 minutes, or until heated through. Refrigerate or freeze leftovers.
