Recipe Ingredients for Greek Shrimp with Tomatoes and Feta

4 oz shrimp
2 plum tomatoes, seeded
3 tbsp onion
1 tsp garlic
1/4 tsp red pepper flake
1 tsp extra virgin olive oil
2 tbsp parsley
1 oz feta

Recipe Directions for Greek Shrimp with Tomatoes and Feta

  1. Preheat the oven to 375.

  2. Clean and peel shrimp.

  3. Dice the tomatoes and leave in a colander to drain, 10 minutes.

  4. Heat the olive oil in a small skillet over medium. Add the onion and garlic and cook until soft, 5 minutes. Add the red pepper flake and shrimp and brown shrimp, 2 minutes per side. Add the tomatoes and cook 1 more minute.

  5. Put mixture in a ramkin and bake 10 minutes. Top with parsley and feta and bake, 2 more minutes.
