The most delicious and easy Greek shrimp EVER. You will impress your guests!

Recipe Ingredients for Greek Shrimp

1 1/2 lb. shrimp, raw, peeled, deveined
1/3 cup fresh lemon juice
1 tbsp butter
2 garlic cloves, minced
3/4 cup scallions, chopped (green part only)
3 large tomatoes, peeled and cut into wedges
3/4 tsp oregano, dried
3 oz reduced fat feta, crumbled
1/2 cup cooking sherry
2 tbsp fresh parsley, chopped

Recipe Directions for Greek Shrimp

  1. Squeeze lemon juice into a large bowl, add the shrimp, and set aside in the refrigerator.

  2. Melt butter in a large skillet.

  3. Add scallions and cook for for 2 minutes.

  4. Add tomatoes and garlic and cook for 3-4 minutes.

  5. Add oregano and cook until tomatoes get soft.

  6. Drain shrimp and add to skillet.

  7. Cook for 3 minutes, turning shrimp to cook evenly.

  8. Add sherry and feta and cook for 1 minute.

  9. Add chopped parsley, stir and serve over hot, cooked rice or orzo (or if you are watching carbs, serve over a bed of wilted baby spinach).
