Serve over rice with a drizzle of olive oil (measure a teaspoon) and lemon wedges. If you'd like a little heat, add a pinch of red pepper flakes when you add the tomatoes.

Recipe Ingredients for Greek Shrimp and Feta Stoup

16 oz diced tomatoes
12 oz shrimp
2 cloves garlic
1 oz feta
1 green pepper
1 small onion
1 cup cooked rice
2 tablespoons olive oil
1 pinch oregano
1 pinch salt

Recipe Directions for Greek Shrimp and Feta Stoup

  1. Dice onion and green pepper separately; minced garlic.

  2. Warm extra virgin olive oil in large, oven-safe skillet; add onion and cook over medium heat for 5 minutes. Add garlic and add to pan; cook for another minute.

  3. Add tomatoes and green pepper and bring to a simmer. Season with oregano and salt to taste. Add shrimp, cover and simmer for 3 minutes, or until shrimp has turned pink.

  4. Sprinkle feta on top of stoup and broil till feta just begins to brown. Serve immediately over hot rice, with a drizzle of olive oil and a squeeze of lemon.
