1 oz nonfat plain yogurt
2 tbsp lemon juice
1 clove garlic
3 cups spinach
1/4 cup cucumber
1/4 cup chopped broccoli
1/2 cup chopped tomatoes
2 tbsp sliced almonds
4 oz salmon

Recipe Directions for Greek Salad with Salmon

Whisk together 2 Tbsp (1 oz) plain nonfat yogurt, juice from 1/2 lemon and 1 clove minced garlic. Toss dressing with 3 cups spinach, 1/4 cup chopped cucumber, 1/4 cup chopped broccoli, 1/2 cup chopped tomatoes and 2 tbsp sliced almonds; top with 4 oz grilled salmon fillet.
