First of all, alterations in terms of amounts of vegetables, cheese, and dressing can be done. Some people like less dressing and cheese, etc. This greek salad is really easy and quick to make, 10 or 15 minutes max. It's great as an appetizer (smaller portion of salad) or a bigger portion can made and will be a great for lunch or dinner. The serving size with the nutrition label is accounting for the salad taking the place of meal (so a much larger portion). Considering this, the salad is low-calorie and generally nutritious as it has lots of vegetables including lettuce, tomato, cucumber, etc. The recipe has quite a bit of fat, cholesterol and sodium, but this is due to the olive oil mostly, feta cheese, and spices put in. Olive oil is actually quite healthy for you compared to other oils, and is made up unsaturated fat which is the best type of fat. One of the best things about this recipe is that it is low-carb. The sugar is mainly from the vegetables, so it is not bad for you. This delicious greek salad is a great way to fill you up for hours without putting on any pounds, and as long as the rest of the day is followed with a nutritious and well-balanced diet (with this recipe: more protein, less sodium/fat/cholesterol), you will be on your way to eating healthier. :)

Recipe Ingredients for Greek Salad

2 tbsp ripe olives, pitted
10 cups romaine lettuce, torn
3 plum tomatoes, cut into wedges
1/2 medium cucumber, cut in half lengthwise, sliced
4 ounces feta cheese, crumbled

Dressing:
1/4 cup olive oil
3/4 teaspoon garlic powder
3/4 teaspoon dried oregano
3/4 teaspoon dried basil
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon rosemary
1/3 cup cider vinegar

Recipe Directions for Greek Salad

  1. Dressing:

  2. Simply pour all ingredients into a container (bottle is best).

  3. Shake vigorously untill well mixed.

  4. Store tightly at room temperature

  5. Mix dressing and olives; set aside.

  6. Toss lettuce with tomatoes and cucumber in salad bowl.

  7. Drizzle with dressing mixture; sprinkle with cheese.
