For the people who hate onions and tomatoes, this is my favorite Greek Salad. Perfect to prepare the night before for a healthy lunch that keeps you satisfied. Put dressing in separate container and mix in when you are ready to eat.

Recipe Ingredients for Greek Salad

100 grams cucumber
30 grams red pepper
30 grams green pepper
30 grams yellow pepper
30 grams feta cheese
6 kalamata olives
1 tbsp extra virgin olive oil
1 tbsp red wine vinegar
2 tbsp fresh lemon juice
1/2 tbsp greek seasoning

Recipe Directions for Greek Salad

  1. Cut thick slices of 1/4 of a cucumber and then halve.

  2. Chop up thick chunks of your favorite selection of peppers, I use yellow, red and orange.

  3. Place in container, top with crumbled feta cheese and olives.

  4. In separate container mix in lemon juice, red wine vinegar, olive oil and greek seasoning. If you don't have greek seasoning, oregano will do.
