Greek Salad Recipe

Makes 6 servings



Serve with Greek Dressing (see recipe), top with croûtons and shrimp if you've an inclination.

Recipe Ingredients for Greek Salad

10 oz. romaine lettuce
1 large cucumber, seeds removed
4 oz. grape tomatoes
6 tbsp. reduced fat feta cheese
4 tbsp. kalamata olives, drained
1 1/2 oz. purple onion, diced

Recipe Directions for Greek Salad

  1. Rinse and dry your hearts of romaine (can sub spring mix) and put in salad bowl.

  2. Cut a large cucumber in half, scoop out seeds, and chop. Add to lettuce.

  3. Halve vertically your grape tomatoes and add to lettuce.

  4. Cube your reduced fat feta, or measure out if using crumbles and add to lettuce.

  5. Halve vertically your kalamata olives and make sure all pits are removed before adding.

  6. Dice your purple onion, or cut into rings if that is your preference.

  7. Dress, toss, and let sit before serving.
