This is an ultra-light Mediterranean salad appropriate for any meal, including breakfast. Great with Hummus or Falafel.

Recipe Ingredients for Greek Salad

1/2 cucumber
1/3 medium onion
2 roma tomatoes
3/4 cup garbanzo beans, drained
1 clove garlic
3 tbsp balsamic vinegar
1/2 tsp oregano
1/8 tsp salt
1 tsp olive oil

Recipe Directions for Greek Salad

  1. Diced tomatoes, cucumber and onions into bite-sized pieces. Mince garlic finely. Toss garlic with vegetables and add garbanzo beans.

  2. Mix vinegar, oil, oregano and salt in a measuring cup. Toss with salad. Add more salt and pepper to taste.
