A quick salad that complements a mediterranean meal.

Recipe Ingredients for Greek Salad

0.5 cups Romaine Lettuce
0.13 cup Chick Peas
0.25 fruit without skin and seeds Avocados
0.13 cup chopped raw Grape Tomatoes
0.5 fruit (2-1/8" dia) Lemons
0.5 serving Extra Virgin Olive Oil

Recipe Directions for Greek Salad

  1. Chop the lettuce and place on a plate. Chop the grape tomatoes and avocado, and place on top of the lettuce. Rinse the chick peas and place on top of salad.

  2. Juice the lemon, careful to leave seeds. Whisk together lemon juice and olive oil with salt and pepper. Dress salad with lemon vinaigrette.
