Scrummy healthy salad ideal to top with roast chicken, very good as it has raw cabbage but the lemon juice softens it and makes it digestable

Recipe Ingredients for Greek Salad with Minty Yoghurt Dressing

8 oz cabbage
4 oz tomato
4 oz cucumber
4 oz onion
4 oz yoghurt
2 oz mint
2 oz cilantro
2 oz lemon juice
3 tablespoons olive oil

Recipe Directions for Greek Salad with Minty Yoghurt Dressing

  1. Chop the mint and stir into the yoghurt, set to one side

  2. Finely slice the cabbage, onions, tomato, cucumber and mix together

  3. Chop the cilantro and add

  4. Dress with the oil and lemon juice and mix until thouroughly coataed

  5. Ideally leave for about 10 mins

  6. Serve with the yoghurt dressing on top and stir through if you like!
