In Greece, Greek salads are made without lettuce. Instead, they use REALLY fresh produce, served it with crusty bread, which is perfect for dipping into the juices at the bottom of the salad bowl. This recipe has been modified to reduce the amount of olive oil (and, by default, vinegar)... otherwise, it's very much what you'd be served if you ordered this in Athens.

Recipe Ingredients for Greek Salad, Athens Style

4 large tomatoes, diced
1 large cucumber, seedless (English cucumber), diced
1/2 red onion, sliced in thin bite-size pieces
3/4 c. Kalamata Olives
12 oz. Feta Cheese
2 tbsp. oregano
1/4 c. Olive Oil
1/4 c. Balsamic Vinegar

Recipe Directions for Greek Salad, Athens Style

  1. Mix together the tomatoes, cucumber, red onion, and olives (you can also add a thinly sliced green pepper, if you like). Mix well.

  2. Divide the mix into 8 serving bowls.

  3. Cut the Feta into 8 slices (cutting so each slice is as wide as possible). Place a slice on top of each bowl.

  4. Sprinkle with oregano.

  5. Drizzle with olive oil and vinegar.
