Recipe Ingredients for Greek Roast Salad

450 grams Green Zucchini
1 1/3 small raw Red Onion
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 serving Extra Virgin Olive Oil
1 tsp Thyme, Fresh
200 grams Tomatoes
2 tbsp Black Olives
1 tbsp Vinegar Balsamic

Recipe Directions for Greek Roast Salad

  1. Preheat oven 200 C

  2. spread chopped zucchinis, onions and capsicum (pepper) on to roasting tin. Drizzle with olive oil and lay thyme on top. Bake 25 - 30 minutes,

  3. Add other ingredients (including feta cheese if desired) on top and back further 10 minutes. Add seasoning if needed when serving
