Recipe Ingredients for Greek Rice Salad

1 cup brown rice
3/4 cup cucumber, finely chopped
1/4 cup shallots, finely chopped
1 cup fresh parsley
1/4 cup fresh mint
2 tbs fresh lemon juice
2 tbs olive oil
1 cup tomato, diced
1/2 cup reduced fat feta
1 (3) Greek olives, finely chopped

Recipe Directions for Greek Rice Salad

  1. Cook rice according to directions and cool

  2. toss together all ingredients and chill
