Recipe Ingredients for Greek Rice Pilaf

1 cup, chopped Onions
2 tbsp Olive Oil
2 clove Garlic
3 tsp Mint
0.13 tsp Spices Ground Black Pepper
4 cup Spinach
3 tbsp Lemon Juice, Canned Or Bottled
4 cup Rice, Brown, Medium-grain, Cooked
1 cup Frozen Green Peas
2 tbsp Dill Weed, Dried
1 cup, crumbled Feta Cheese

Recipe Directions for Greek Rice Pilaf

  1. In a heavy skillet, sauté the onions in the oil on medium heat for about 5 minutes, until the onions begin to soften.

  2. Add the garlic, mint, and pepper, and continue to sauté for 2 minutes.

  3. Stir in the spinach, lemon juice, rice and green peas.

  4. Add the dill. Cover and cook for 3 or 4 minutes, stirring occasionally.

  5. When the spinach is limp and the rice is hot, top with the feta and serve immediately.
