Great flavor & easy to prepare

Recipe Ingredients for Greek Rice Pilaf

3/4 c. chopped onion (1/2 large onion)
1 T olive oil
1 garlic clove, minced
1/2 T dried mint leaves
1/8 tsp. black pepper
2 c. spinach, washed
1 1/2 T. lemon juice
2 c. brown rice, cooked
1/2 c. green peas
1 T chopped fresh dill
1/2 c. feta cheese, crumbled

Recipe Directions for Greek Rice Pilaf

  1. Saute onions in oil over med. heat for about 5 min., until onions begin to soften. Add garlic, mint & pepper & continue to saute for 2 min. Stir in all remaining ingredients except feta; cover and cook for 3-4 min. stirring occasionally.

  2. When the spinach is limp & the rice is hot, top with the feta & serve immediately.
