Healthy and yummy. Perfect for a summer salad.

Recipe Ingredients for Greek Quinoa Salad

2 cups Quinoa
1/2 large red onion
2 cups Snap Peas
1 cup Cucumbers
1/2 cup Parsley
1/2 cup Cilantro
2/3 cup Black Olives
1 cup Feta Cheese
1/4 cup Apple Cider Vinegar
3 tablespoons Extra Virgin Olive Oil
1 lime+yields lime juice
2 garlic cloves

Recipe Directions for Greek Quinoa Salad

  1. Cook quinoa and cool. dice all above ingredients and mix into quinoa.

  2. Mix diced garlic, apple cider vinegar, EVOO, and lime juice. Pour over salad.

  3. Add the feta cheese.
