Recipe Ingredients for Greek Quinoa Salad

1 tbsp Lemon Juice, Canned Or Bottled
0.2 cup Quinoa
0.25 cup Organic Cherry Tomatoes
5 sprigs Dill Weed, Fresh
0.25 cup slices Cucumber
0.25 tbsp Extra Virgin Olive Oil
0.25 Can Artichoke

Recipe Directions for Greek Quinoa Salad

  1. 1. Cook the quinoa with some salt and chicken broth.

  2. 2. Mix the lemon juice, olive oil and chopped dill with sliced cherry tomatoes, chopped artichoke hearts, and sliced cucumbers. Add salt to taste.

  3. 3. When quinoa finishes, fluff it with a fork and leave on the counter to cool before tossing it with the veggies and dressing.
