The chicken, spinach, feta and herb filling is so good all wrapped in melted cheese and warm, crispy tortillas!

Recipe Ingredients for Greek Quesdilla

2 tablespoons mint, dill and parsley, chopped
1 green onion, sliced
1/4 cup feta, crumbled
1/2 cup mozzarella or jack (grated)1/4 cup kalamata olives, pitted and chopped
2 tablespoons sun-dried tomatoes, packed in oil, chopped
1/4 cup kalamata olives, pitted
1 salt and pepper to taste
2 low carb tortillas
6 ounces chicken, cooked
1 medium cucumber, peeled and sliced

Recipe Directions for Greek Quesdilla

  1. Mix the herbs, green onions, both cheeses, olives, sun-dried tomatoes, salt and pepper in a bowl.

  2. Melt a touch of butter in a pan. Place a tortilla into the pan, swirl it around in the butter and repeat with the second tortilla.

  3. Place one tortilla back in the pan. Sprinkle half of the cheese mixture on the tortilla followed by the chicken and then the remaining cheese mixture and finally the other tortilla.

  4. Cook until the quesadilla is golden brown on both sides and the cheese is melted.
