A delicious spin on Greek Potato Salad.

Recipe Ingredients for Greek Potato Salad

1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
2 tbsp chopped Onions
1 tbsp(15 g) Extra Virgin Olive Oil
3/20 cup, crumbled Feta Cheese
1 lemon yields Lemon Juice
1 tablespoon Oregano
1 cup Parsley
1 dash Salt, Table

Recipe Directions for Greek Potato Salad

  1. Clean and quarter potatoes, then place them in a pot of boiling water. Boil until tender.

  2. While potato is boiling mix together chopped red onion, juice from one lemon, oregano, parsley, tbsp of olive oil and a dash of salt. (add balsamic vinegar for extra flavor if desired).

  3. When potatoes are done cooking, drain and toss in dressing mix.

  4. Serve while still hot with feta cheese on top.
