Recipe Ingredients for Greek Penne Pasta Salad

14 1/2 oz (Barilla Plus Penne Pasta)
1 tsp olive oil
2 tbsp pine nuts
1 1/2 tsp minced garlic
20 oz frozen spinach (thawed)
1 lb grape tomatoes (sliced in half)
4 oz feta cheese
60 grams kalamata olives, chopped (about 12)

Recipe Directions for Greek Penne Pasta Salad

  1. Cook pasta, drain, set aside (cover to keep warm).

  2. Coat skillet with cooking spray. Heat olive oil and add pine nuts and garlic. Cook until golden brown (3 minutes). Stir in spinach and tomatoes, cook about 3 minutes until heated through.

  3. Add pasta to spinach mixture, top with feta and olives. Serve hot or cold.
