Courtesy of Laurelie41 at Recipezaar.com. I adjusted it some to my liking, deleted artichokes and using spinach instead and added more chicken and less pasta.

Recipe Ingredients for Greek Penne and Chicken

8 oz pasta, penne noodles
1 1/2 tablespoons butter
1/2 cup red onions, chopped
2 garlic cloves, minced
2 1/4 lb skinless boneless chicken breast halves, cut into bite-size pieces
2 cups fresh spinach
1 tomato, chopped
1/2 cup feta cheese, crumbled
3 tbsp parsley
1 tbsp lemon juice
1 tsp dried italian seasoning
1/8 tsp salt (I use McCormicks garlic sea salt)
1/8 tsp pepper (I use McCormicks garlic pepper)

Recipe Directions for Greek Penne and Chicken

  1. In a large pot bring salted water to a boil. Add penne pasta and cook until al dente, drain and set aside.

  2. Using a large skillet and over medium-high heat melt butter. Add onion and garlic to melted butter and cook for 2 minutes. Stirring occasionally, add chicken and continute cooking until golden brown, approximately 5-6 minutes.

  3. Reduce heat to medium-low, begin adding fresh spinach, chopped tomato, feta cheese, fresh parsley, lemon juice, italian seasoning, salt, pepper, and drained penne pasta to the chicken. Cook until heated through, approximately 5 minutes.
