Recipe Ingredients for Greek Pasta Salad


Dressing:
3/4 c Extra Virgin Olive Oil
1/4 c Balsamic Vinegar
1/3 c Red Wine Vinegar
1 tbsp White Sugar
1 tbsp Salt
2 tsp fresh or dried oregano
1 tsp pepper
2 clove garlic

Pasta salad:
300 g Whole Wheat Rotini
1 carrot, chopped
1 red pepper, chopped
1 cucumber, seeded and sliced thinly
1/2 red onion, slice thinly
1/4 c Kalamata Olives
3/4 c Feta Cheese

Recipe Directions for Greek Pasta Salad

  1. Whisk all dressing ingredients together in a large bowl. Set aside.

  2. Cook pasta in salted water according to directions and preference (I prefer al dente). RINSE in cold water immediately to cool off and stop cooking.

  3. Add pasta, all vegetables and feta into bowl with dressing. Toss together. Cover and refrigerate for at least 24hours.
