An easy vegetarian entree. Could easily be altered to include more vegetables, such as broccoli.

Recipe Ingredients for Greek Pasta Casserole

2 oz Extra Virgin Olive Oil
4 clove Garlic
4.75 cup dry Dreamfields Rotini
7 oz Roasted Peppers
4 tbsp Pearls Ripe Olives
2 oz Wine, Table, Red
2 tsp Spices Oregano Leaves
0.5 tsp Spices Crushed Red Peppers
0.25 cup Parsley
15 oz Diced Tomatoes
1 serving trader joes canned artichoke hearts

Recipe Directions for Greek Pasta Casserole

Boil noodles according to package directions but undercook them a little and drain. Sautee garlic in dutch oven in olive oil until translucent and remove from heat. Add the noodles, and remaining ingredients, noting that all canned ingredients except the tomatoes should be drained first. Mix and cover with lid or foil. Bake at 375 degrees F for 25 minutes then uncover and bake 10 -15 minutes longer.
